Hilliard’s Beer opened in October of 2011 in Seattle’s Ballard neighborhood. The brewery and tasting room are located near the corner of 15^th Avenue NE and NE 49^th Street in a large space that was formerly a car dealership. The tasting room shares the same space as the brewery so expect an industrial but inviting environment: concrete floors, high ceilings and fluorescent lighting. You will marvel at the size of the mammoth spools repurposed as giant round tables—the kind of giant wooden spools the local electric utility uses for high voltage wire. The tasting room at Hilliard’s Beer welcomes kids of all ages. The tasting room does not offer food but you will occasionally find a food truck parked nearby and you are welcome to bring your own grub.

The namesake behind Hilliard’s Beer is Ryan Hilliard, a self-described home brewer gone pro. To open the brewery, Ryan stepped away from a career as a flight instructor. Now he brews on a 15-barrel system amidst towering stacks of aluminum cans awaiting his yield. Ryan’s friend Adam Merkl manages the sales and marketing side of the business.

Hilliard’s Beer was one of the first breweries in Washington to differentiate itself by focusing on aluminum cans. While many other breweries are now beginning to do it, packaging beer in cans was an important part of the original Hilliard’s Beer business plan. In fact, Hilliard’s Beer is one of just a small handful of American breweries packaging Saison (a traditional Belgian-style beer) in cans.
